Jim Hotaling is a transplant from NYC where he trained and cooked for 40 years.

A passionate culinarian, he specialized in saucier work for many years. Trained in classical French cuisine and committed to supporting local growers, and providing the freshest seasonal menu items available with an emphasis on both new American and classic French cuisines.

Jim and the Spoke and Steele culinary team are eager to reprising the innovative reputation for which S&S has been known.
